CNY: almond cookies


confession
i always end up buying my almond cookies
i am just too lazy to bake em myself


earlier this week i was hunting for a good recipe
because there just wasn't one in the family
my ancestors were not exactly bakers
they only cooked
which is probably the reason my great-grandmother is still alive 
no sugar, no red meat, no stress and lots of vegetables
going to the market every morning
and puttering around the house like normal

she is a 100
wowie zowie


but back to the cookies
here is a recipe that looks like it might be good
and i might be baking em for CNY pretty soon



Chinese Restaurant Almond Cookies

"It's been said that the lard is what produces the traditional taste. However, if desired, butter or margarine may be substituted for very satisfactory results."
INGREDIENTS:
2 3/4 cups sifted all-purpose flour
1 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup lard
1 egg
1 teaspoon almond extract
48 almonds
DIRECTIONS:
1.Sift flour, sugar, baking soda and salt together into a bowl. Cut in the lard until mixture resembles cornmeal. Add egg and almond extract. Mix well.
2.Roll dough into 1 inch balls. Set them 2 inches apart on an ungreased cookie sheet. Place an almond on top of each cookie and press down to flatten slightly
3.Bake in a pre-heated 325 degrees F (165 degrees C) oven for 15-18 minutes. Cool on rack.
