strawberry muffins forever

i have been craving strawberry muffins for the past few days and finally got round to baking up a batch sunday evening. they were so yum! i substituted all purpose flour for whole wheat and used brown sugar instead of white. these muffins are a great way to use up the not so pretty looking strawberries in the fridge. i topped them off with a cinnamon sugar mix to add some extra sweet without adding it throughout the entire muffin.

hope you get to give them a try!

*i am feeling much better by the way- still tired but i have a feeling that won't go away until little miss arrives :)

craving: nutella

ooh boy have things changed with what ive been wanting to eat lately. in-n-out cheeseburgers remain a constant favorite, but now i want nutella. and lots of it.

promise, i am trying my best to be healthy but i never knew the power of these cravings. menchies frozen yogurt has been a huge craving, but it has been easily (and more healthfully) satisfied with orange juice. weird right?

but how do you healthfully satisfy a nutella craving? question of the month my friends. maybe even question of the year.

first recipe i would love to try:
nutella brownies from Mother Thyme

Mother Thyme takes such pretty pictures!

second recipe:
nutella banana smoothie also from Mother Thyme

another awesome photo

third recipe:
nutella crepes from The Yellow Table

oh wowie- doesn't that look so yum?

oh dear what is a pregnant lady to do? maybe ill just pick 2 out of 3 to make myself feel better! ry does not like sweets so these desserts will be all for me. dangerous.

Applesauce Christmas Ornaments

3/4 cup applesauce
1 cup cinnamon

Makes (9) 3 inch ornaments

Combine all ingredients and knead until smooth dough forms. If dough is too sticky add more cinnamon. Roll dough on a cinnamon dusted surface to 1/4- inch thickness. Cut dough with cookie cutters and make a hole with a straw for hanging with ribbon. Transfer to a sheet pan to dry for three to four days, turning once every day. For faster drying bake on a lined cookie sheet at 170 degrees for three to four hours. When dry, decorate with fabric or craft paint if desired and hang with ribbon. pumpkin spice hot chocolate

i have had a very strong craving for pumpkin chocolate cookies, then i thought to myself what about pumpkin hot chocolate? ooooh. when i googled pumpkin hot chocolate i came across this recipe and a fun blog called cookies and cups. super cute name. can't wait to try this out! maybe i will make it as i wait for trick or treaters tonight.

a pet peeve i wanted to discuss: teenagers trick or treating without a costume. WHY?! if you are going to go trick or treating you should wear a good costume! thoughts on this? i wanted to hand out apples to those teens who failed to dress appropriately, but ry said we better not or else we might get egged or TPeed. fabulous.

update on morning sickness: it is getting better, but sometimes i still get quite sick with nausea. funny how the only thing that will make you feel better is food when food is what you want to run away from. i crave menchies frozen yogurt with strawberry crunches. wowie. ry and i went to menchies for the first time friday night and im in love.  its just super cute. my favorite flavor? peanut butter and the tart original. not that great together, but so good by themselves. ry and i don't eat a lot of sugar (besides with this pregnancy lol) so when we go out to frozen yogurt we share a cup and only put a bit of each flavor that appeals to us. maybe people think we are weird but i suppose its better for us and less expensive. win-win.

hope you try out this hot chocolate! im planning on it :)

  • 2 1/2 cups milk
  • 1/3 cup hot cocoa mix (no marshmallows)
  • 1/4 cup canned pumpkin
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. vanilla
  • pinch of salt
  • whipped cream or marshmallows optional

  1. In a medium sauce pan over medium low heat whisk together your milk and hot cocoa mix.
  2. Add your canned pumpkin and pumpkin pie spice.
  3. Heat until desired temperature is reached.
  4. Pour into glasses and top with whipped cream and/or marshmallows and a sprinkle of pumpkin pie spice.
Number of servings (yield): 3

flapjacks, pancakes, or waffles?

recently i have been reading more and more in my deceptively delicious book
there are definitely pros and cons to this way of cooking
but i think the pros outweigh the cons

i do love the idea of adding veggie and fruit purees to recipes
but it is a lot of extra work
im sure with a little planning and preparedness
it can become easier

on a grocery trip i spotted these kodiak cakes
the marionberry syrup looked good too
marionberries remind me of my friend rachelle
my first roomate- marionberries are her fave

so i decided to give them a try
glad i did
i really love them
they taste wholesome
not sure how wholesome they actually are for me
but i loved the taste
maybe next time i will try slipping in some fruit puree in the batter

ry doesn't like waffles
gasp!
i know
when i found that out i was a little heartbroken
my dreams of owning a cute waffle-maker flew off into the distance
he says they are too drying for him
so pancakes and flapjacks are the answer
not sure the difference between the two
but they are more cake-like and have more moisture

but maybe in the future i will get a waffle-maker
not for ry
but for me and the kids
because hopefully no kid of mine will turn down yummy homemade waffles

what is your favorite?
pancakes, flapjacks, or waffles?

the sprinkles and the lemon curd filling
so good

pastel nonpareils are my fave

a while ago i bought a blue hydrangea
have not put it in the yard yet
its one of my favorite flowers

pretty in an un-fussy relaxed way

don't you just love the way simple icing and sprinkles look?
its so girly and festive

here is the recipe to try out

blueberry scones

another gloomy, wet and rainy day
im in the mood for freshly baked scones and really creamy soup
here is the link for the blueberry recipe
quite good and not very much clean-up if all done in a food processor

flower photos via google images

yesterday i made a trip to costco and found these beautiful hydrangeas
hydrangeas are one of my most favorite flowers
they look so beautiful put together in an arrangement
or one bunch placed in a smaller, shorter vase
the variety is called nikko blue
i thought it was cute since my brother's name is nico
and he is going on a mission!

we are so excited for him!

nigella says: chocolate key lime pie

i love this cookbook
before we moved ry and i decided to make chocolate key lime pie
a celebration of green for st. patty's day
the mint green color of the pie was just beautiul
(even if it was unnatural- food coloring)
the key limes gave the pie just the right amount of "umph"
the crust was my favorite part for sure
the chocolate chips, graham cracker, and richly dark cocoa powder
it was pretty much amazing
see this video for a similar mint green colored pie

aren't the ingredients just beautiful?

ry helping with the filling
hand blenders are awesome

crust firming up in the fridge

pouring the luscious key lime filling in the crust

voila! isn't the color just lovely?

dark chocolate shavings

and some lime zest for color and flavor
